Ingredients:
- 200g rice noodles
- 200g shrimp or chicken
- 2 eggs
- 1 cup bean sprouts
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- ¼ cup crushed peanuts
- Lime wedges for serving
Instructions:
- Soak rice noodles in warm water until soft. Drain and set aside.
- Heat oil in a pan, sauté garlic, then add shrimp/chicken and cook until done.
- Push to one side, crack eggs in the pan, scramble, and mix with meat.
- Add drained noodles, tamarind paste, fish sauce, soy sauce, and sugar. Stir-fry well.
- Add bean sprouts and green onions, cook for 1 minute.
- Serve hot with crushed peanuts and lime wedges.
