Ingredients:

  • 200g rice noodles
  • 200g shrimp or chicken
  • 2 eggs
  • 1 cup bean sprouts
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • ¼ cup crushed peanuts
  • Lime wedges for serving

Instructions:

  1. Soak rice noodles in warm water until soft. Drain and set aside.
  2. Heat oil in a pan, sauté garlic, then add shrimp/chicken and cook until done.
  3. Push to one side, crack eggs in the pan, scramble, and mix with meat.
  4. Add drained noodles, tamarind paste, fish sauce, soy sauce, and sugar. Stir-fry well.
  5. Add bean sprouts and green onions, cook for 1 minute.
  6. Serve hot with crushed peanuts and lime wedges.
