Ingredients:

For the Gnocchi:

  • 2 medium purple sweet potatoes
  • 1 ½ cups all-purpose flour
  • 1 egg yolk
  • ½ tsp salt

For the Miso Butter Sauce:

  • 2 tbsp unsalted butter
  • 1 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tbsp water

Instructions:

  1. Bake or steam the sweet potatoes until soft. Mash them and let them cool.
  2. Mix in egg yolk and salt, then gradually add flour until a soft dough forms.
  3. Roll the dough into ropes and cut into small gnocchi pieces.
  4. Boil gnocchi in salted water until they float, then drain.
  5. Melt butter in a pan, stir in miso, soy sauce, honey, and water.
  6. Toss the gnocchi in the sauce and serve with fresh herbs and sesame seeds.
