Instructions:

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a saucepan, melt butter over medium heat. Stir in brown sugar, honey, and miso paste.
  3. Let the mixture bubble for 3-4 minutes without stirring, then add vanilla and baking soda. Stir quickly (it will foam up).
  4. Pour the caramel over the popcorn and toss to coat evenly.
  5. Spread the popcorn on the baking sheet and bake for 30 minutes, stirring every 10 minutes.
  6. Remove from oven, sprinkle with sesame seeds and sea salt, and let cool before serving!
