Ingredients:

  • 1 head green or red cabbage (cut into thick “steaks”)
  • Olive oil, salt, pepper
  • For chimichurri: chopped parsley, garlic, red wine vinegar, olive oil, chili flakes

Instructions:

  1. Brush cabbage slices with oil, salt, pepper. Grill or roast until charred.
  2. Blend or mix chimichurri ingredients.
  3. Drizzle over cabbage. Serve hot or warm.

Pros:
✅ Plant-based & full of flavor
✅ Super cheap but looks restaurant-y
✅ Great side or main for veg eaters

Cons:
❌ Cabbage smell if over-roasted
❌ Needs high heat for good char
