Ingredients:

  • 1 ripe mango (julienned)
  • 200g rice noodles
  • 1 small cucumber (sliced thin)
  • 1 chili (or chili flakes)
  • Juice of 1 lime
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Fresh mint or cilantro
  • Optional: crushed peanuts

Instructions:

  1. Cook rice noodles, rinse with cold water.
  2. Mix mango, cucumber, chili, lime, soy, and sesame oil.
  3. Toss with noodles. Garnish with herbs & peanuts. Chill before serving.

Pros:

Cons:
❌ Ripe mango timing is key
❌ May be too tangy/spicy for some
