Ingredients:
- 1 ripe mango (julienned)
- 200g rice noodles
- 1 small cucumber (sliced thin)
- 1 chili (or chili flakes)
- Juice of 1 lime
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Fresh mint or cilantro
- Optional: crushed peanuts
Instructions:
- Cook rice noodles, rinse with cold water.
- Mix mango, cucumber, chili, lime, soy, and sesame oil.
- Toss with noodles. Garnish with herbs & peanuts. Chill before serving.
