- Prep the jackfruit: Drain, rinse, and shred the jackfruit (removing hard core pieces if necessary).
- Cook the filling:
- Heat oil in a skillet. Sauté onions until soft.
- Add garlic, jackfruit, and kimchi. Cook for 5 minutes.
- Stir in gochujang, soy sauce, sesame oil, and maple syrup. Cook until everything is well combined and jackfruit starts to brown (another 5-7 minutes).
- Make the crema:
- Blend avocado, lime juice, yogurt, salt, and water until smooth and creamy.
- Assemble tacos:
- Warm tortillas, add jackfruit mixture, drizzle with crema, and top with cilantro/radish if desired.
