Ingredients (Serves 3):
- Store-bought or homemade gnocchi: 500g
- Kimchi: 1 cup, chopped
- Gochujang (Korean chili paste): 1 tbsp
- Tomato paste: 2 tbsp
- Mozzarella cheese: 1 cup, shredded
- Parmesan: 1/3 cup, grated
- Onion: 1 small, diced
- Garlic: 2 cloves, minced
- Heavy cream: 1/2 cup
- Olive oil: 1 tbsp
Instructions:
- Boil gnocchi until they float; drain and set aside.
- Sauté onion and garlic in olive oil. Add kimchi and cook for 3 minutes.
- Stir in gochujang and tomato paste. Cook another 2 minutes.
- Add cream, stir well, and simmer for 3 minutes. Fold in gnocchi.
- Pour mixture into a baking dish. Top with mozzarella and Parmesan.
- Broil for 5–8 minutes until cheese is bubbly and golden.
