  1. Prep the jackfruit: Drain, rinse, and shred the jackfruit (removing hard core pieces if necessary).
  2. Cook the filling:

    • Add garlic, jackfruit, and kimchi. Cook for 5 minutes.
    • Stir in gochujang, soy sauce, sesame oil, and maple syrup. Cook until everything is well combined and jackfruit starts to brown (another 5-7 minutes).
  3. Make the crema:
    • Blend avocado, lime juice, yogurt, salt, and water until smooth and creamy.
  4. Assemble tacos:
    • Warm tortillas, add jackfruit mixture, drizzle with crema, and top with cilantro/radish if desired.
