A tropical dessert that combines the sweet and creamy flavors of coconut-infused sticky rice with refreshing dragon fruit.

🥥 Ingredients:

  • 1 cup glutinous rice
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/2 ripe dragon fruit (red variety), diced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp crushed peanuts (optional)
  • Fresh mint leaves for garnish

🔥 Instructions:

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak it for at least 4 hours or overnight.
  2. Steam the rice for about 25–30 minutes until soft and sticky.
  3. In a saucepan, heat coconut milk, sugar, and salt over low heat until dissolved. Do not boil.
  4. Pour most of the coconut milk over the steamed rice and mix well. Let it sit for 10 minutes to absorb the flavor.
  5. Arrange diced dragon fruit over the rice. Drizzle with the remaining coconut milk.
  6. Sprinkle with toasted sesame seeds and crushed peanuts. Garnish with mint leaves.
