Ingredients:
- Arborio rice – 1 cup
- Green curry paste – 1 tbsp
- Coconut milk – 1 cup
- Veggie or chicken broth – 3 cups, warm
- Shallots – 2, finely chopped
- Kaffir lime leaves – 2 (optional)
- Thai basil – a few leaves
- Butter – 1 tbsp
- Parmigiano Reggiano – 1/4 cup (optional for a fusion spin)
👨🍳 Instructions:
- Sauté shallots and curry paste in butter.
- Add rice and toast for 2 mins. Slowly add warm broth, stirring.
- After 10 mins, stir in coconut milk and lime leaves.
- Cook until creamy, then stir in basil and cheese if using.
