Ingredients:

  • Kaffir lime leaves – 2 (optional)
  • Thai basil – a few leaves
  • Butter – 1 tbsp
  • Parmigiano Reggiano – 1/4 cup (optional for a fusion spin)

👨‍🍳 Instructions:

  1. Sauté shallots and curry paste in butter.
  2. Add rice and toast for 2 mins. Slowly add warm broth, stirring.
  3. After 10 mins, stir in coconut milk and lime leaves.
  4. Cook until creamy, then stir in basil and cheese if using.
